- 2 Tbsp. margarine
- 2 yellow onions, chopped
- 2 large potatoes, chopped and par-boiled
- 1 tsp salt
- 1/2 tsp. paprika
- 1/2 tsp. turmeric
- 1 lb. tomatoes, chopped
- 2 green chiles, sliced (optional)
- 1-inch piece of ginger, finely chopped
- 1 tsp. soft brown sugar
- 1/2 tsp. garam masala
- 1/2 tsp. chopped cilantro
Heat the margarine and fry the onions on medium with the par-boiled (and drained) potatoes, salt, paprika, and turmeric. Cover the pan as it cooks; stir occasionally. Once the potatoes are almost cooked, add the tomatoes, chiles, ginger, and brown sugar, and raise the heat. Stir frequently to prevent the mixture from sticking. Once the potatoes are done, garnish with the cilantro and sprinkle the garam masala on top.
