Whole Wheat Banana Bread

  • 3 C. whole wheat flour
  • 2 C. sugar
  • 5 or 6 mashed bananas (brown ones are best)
  • 1 C. chopped walnuts
  • 2/3 C. vegan margarine
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 8 Tbsp. soymilk 
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg

Preheat oven to 350. Butter two loaf pans. In a large bowl, mix together dry ingredients.  In a separate bowl, stir milk and sugar until the sugar begins to dissolve, then mix in the bananas.  Fold the wet ingredients into the dry until just blended. Pour into pans and bake 50 to 60 minutes or until toothpick comes out clean. Remove from pans to cool.
