garam masala

4 parts black peppercorns
4 parts coriander seed
3 parts cumin seed
1 part cloves
1 part cardamom seed
1 part cinnamon

Grind the ingredients together and store the garam masala in an airtight glass container. (Clove oil dissolves plastic, so you won't want to use that.)
