Black bean chili

3 T. olive oil
2 medium onions, chopped
2 medium red bell peppers, chopped
8 cloves garlic, minced
2 T. chili powder
2 tsp oregano
2 tsp cumin
1/2 tsp cayenne pepper
3 15 oz. cans black beans, drained
8 oz. can tomato sauce
15 oz. can diced tomatoes
8 oz. can unsalted corn, drained (optional)
salt and pepper to taste

Heat oil in heavy pot over medium heat.  Add onions, peppers, and garlic and saute until soft--about 10 minutes.  Stir in chili powder, oregano, cumin, and cayenee; cook 2 minutes, stirring.  Add beans, tomato sauce, tomatoes, and corn.  Bring mixture to a boil.  Reduce heat to medium-low and simmer, stirring occasionally, 15 minutes or until chili begins to thicken and flavors meld.  Test seasonings and add additional spices as desired.
